THIS SALAD MAKES YOU GOOD

Eating is fun. And some foods are actually really happy! The first thing that comes to mind is chocolate? Nothing against sweets, but the alternative can also be a salad. Not only is it healthy – it also makes us happy longer than chocolate. So, let's start: Take beetroot, spinach, avocado, tomatoes, nuts and sweet potato. With this light salad recipe, something tasty is guaranteed!

Have you ever heard of Buddha Bowls? Different ingredients are combined in these colorful bowls - as healthy as possible and also beautiful to look at. As is well known, the eye eats too!

For the recipe that I would like to share with you today, I went looking for healthy foods with the ultimate guarantee of happiness. Et voilà: Here comes the healthy power combination!

Beetroot contains folic acid and betanin, prevents depression and insomnia and stimulates serotonin production. Salmon contains vitamin B (makes you resistant to stress!) and lots of omega-3 acids: These stimulate blood circulation and prevent cardiovascular diseases. Tomatoes contain the anti-inflammatory lycopene and the potassium in avocado is considered to lower blood pressure. Potassium is also found in sweet potatoes, which also prevents cravings. Lemons are rich in folic acid, which also has a positive effect on our mood. Popeye already knew that spinach is healthy! But this is less due to the iron content than to the vitamin B. Brazil nuts, on the other hand, contain magnesium and selenium, both of which are good for depression and exhaustion.

So what happens when you combine all of these happiness makers? A big portion of satisfaction! And a portion of chocolate is allowed for dessert.

THE INGREDIENTS FOR 2 PEOPLE:

150 g stremella salmon, preferably organic

1 beetroot

1 sweet potato

1 avocado

3 tomatoes

2 handfuls of spinach

10 Brazil nuts

10 walnuts

2 tbsp olive oil

FOR THE DRESSING:

2 tbsp olive oil

Juice 1/2 lemon

Salt, pepper

AND THIS IS HOW IT WORKS:

For the salad, cut salmon into bite-sized pieces.
Wash, peel and slice the beets. Wash and dice sweet potatoes. Spread both on a tray, drizzle with two tablespoons of olive oil and bake in the oven at 180 degrees for thirty minutes.
Halve the avocado, remove the seeds and cut into slices.
Wash and chop tomatoes.
Wash spinach and spin dry.
Chop the nuts and roast them in a pan without fat.
Mix all the ingredients for the dressing.
Arrange the salmon, avocado, tomatoes and spinach in a bowl along with the lukewarm oven vegetables. Pour the dressing over it and serve sprinkled with the chopped nuts.
